FLASH TO THE PAST OF VIRTUAL CHRISTMAS BLOG HOPS

My 2013 Recipe

RITZY CHOCOLATE MINT COOKIES


1/2 pound semi-sweet dark chocolate chips
2-3 drops peppermint extract
1 sleeve of Ritz Crackers
Some crushed candy canes

Melt dark chocolate over low heat or in a glass cup at 15-second intervals in the 
microwave (stir after each 15 seconds.) Stir 2-3 drops of peppermint extract into 
the melted chocolate (don't use too much peppermint--the 2-3 drops is plenty.) 
Using a fork or dipping tool, dip each Ritz Cracker in the melted chocolate. 
Place on a foil covered cookie sheet making sure they don't touch each other. 
Sprinkle each chocolate dipped cracker with a small amount of crushed candy cane. 
Chill. Eat. Enjoy.

Virtual Christmas Cookie Exchange 2024

It's time for the yearly Virtual Christmas Cookie Exchange!
This is always such a fun one so I'm glad it's the one that ends my run with blog hops.


I really have to say thank you to Joan for hanging in with me for all these years.
She's really good at slapping me on the side of the head when my brain gets sidetracked.
She amazes me with her love for tiny fabric pieces and her ability to sew like a speed demon.
Having her as my wicked Halloween friend has been a pleasure, too.

Though Carla from Creatin' in the Sticks had to end her blog hop hostess run early,
I have to thank her for being a part of my life...thank you, Carla!
There's still a couple kayaks in my garage waiting for you to use. xo

Now on to this year's goodies...

I seem to be on a quilt kit/panel sewing kick lately. 
Usually I prefer using my own pattern or design on a quilt, but those kits can be enticing.

This quilt was "Kris Kringle" by Riley Blake Designs.
I loved the panel and it was on sale, so buying the kit was a no brainer.



My youngest daughter made cookies for this blog hop while I was visiting her
and the rest of the family in Ohio. There were amazing and so delicious!

Virtual Christmas Cookie Exchange 2023

The Virtual Christmas Cookie Exchange is my favorite blog hop of the year.
Okay, I really love them all, but this one is a tradition on my blog.
It started in 2013 and I missed only one year for reasons I don't remember.


The challenge was to share any of the items listed below:

Christmas recipe (cookies or something else food related)
A favorite Christmas memory
Christmas quilt/project or gift idea

My project is a remake of a different quilt pattern from a few years ago. 
I made this one a little bigger and changed the fabrics.

A TOUCH OF CHRISTMAS

This year my recipe/baking adventure was done a gazillion miles away in Ohio without me.
It seems that far anyway, now that the Monkey Boys and Monkey Girl moved there.
Thank you to my beautiful daughter and Monkey Boy #4 for helping me out!

CHOCOLATE MARSHMALLOW COOKIES

Makes 24 cookies

One Devil’s Food cake mix (I used Duncan Hines)
2 eggs
1/2 cup oil (canola or vegetable oil)
12 large marshmallows
1/2 cup butter
1/3 cup unsweetened cocoa powder
1 teaspoon vanilla
5 cups powdered sugar
1/3 cup milk

INSTRUCTIONS:

Combine cake mix, eggs, and oil in bowl and mix well. 

Scoop tablespoon sized dough balls onto a baking sheet that has been sprayed with cooking 
spray or lined with parchment paper, then roll the dough in your hands to make smoother balls.


Bake at 350 degrees for about 9 minutes.

While the cookies are baking, cut each marshmallow in half with cooking shears. 
You can spray the shears with cooking spray so the marshmallows don’t stick. 
When the cookies are done, place a marshmallow half, cut side down, on each cookie 
and bake in the oven for another 2 minutes. 


Remove cookies from the oven and lightly flatten each marshmallow down.


While the cookies cool, make the frosting. Melt the butter and mix in the cocoa powder and 
vanilla. Add the powdered sugar and milk and mix with a hand mixer or stand mixer 
on high for a few minutes until smooth.

 Frost the cookies with a piping bag or spread the frosting over the cookies with a knife 
or spatula to cover the marshmallows completely.


Examine what they look after taking a bite.


Enjoy the rest of the cookie!
