It's day four of the Virtual Cookie Exchange and Christmas Blog Hop and I get to share the day with some amazingly creative bloggers...lucky me! It's been a fabulous blog hop and I know I've gained at least 10 pounds checking out the recipes and my project list has grown and grown from all the ideas. Loving it!
2 cups sugar
1 ½ teaspoon vanilla
4 teaspoons lemon zest
2 tablespoons lemon juice
3 cups flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1 cup powdered sugar (for rolling dough in)
Add and mix vanilla, eggs, lemon zest, lemon juice. Add flour, salt, baking soda, baking powder. Mix just until blended.
Use scooper or roll dough into balls. Roll balls in powdered sugar and place a couple inches apart on greased cookie sheet. Bake 10-12 minutes until barely brown on the bottom of cookies. Let set for 8 minutes on the cookie sheet. Remove from cookie sheet to finish cooling. Sprinkle with additional powdered sugar (it makes them prettier if you do!)
I don't think I could ever live at a house without a lemon tree again because I'm in love with that fruit! My neighbors have appreciated the bags of lemons they are getting, too.
