It's the last day of the Virtual Christmas Cookie Exchange...boo hoo.
I don't want it to end!
I've gained 10 pounds just reading all the yummy recipes and my quilting to-do list

Virtual Christmas Cookie Exchange Day Three

This is day three of the Virtual Christmas Cookie Exchange.
The last two days have been amazing!

I'm sharing my blog with Danice of Homespun Hannah who had some computer 
issues. Those darn elves can really wreck havoc sometimes!

 Last year, it was an unfinished quilt top. This year it is all completed. 
The pattern is Glad Tidings  by Pam Buda of Heartspun Quilts.  It uses 20” X 26”.

Virtual Christmas Cookie Exchange 2023

The Virtual Christmas Cookie Exchange is my favorite blog hop of the year.
Okay, I really love them all, but this one is a tradition on my blog.
It started in 2013 and I missed only one year for reasons I don't remember.


The challenge was to share any of the items listed below:

Christmas recipe (cookies or something else food related)
A favorite Christmas memory
Christmas quilt/project or gift idea

My project is a remake of a different quilt pattern from a few years ago. 
I made this one a little bigger and changed the fabrics.

This year my recipe/baking adventure was done a gazillion miles away in Ohio without me.
It seems that far anyway, now that the Monkey Boys and Monkey Girl moved there.
Thank you to my beautiful daughter and Monkey Boy #4 for helping me out!

CHOCOLATE MARSHMALLOW COOKIES

Makes 24 cookies

One Devil’s Food cake mix (I used Duncan Hines)
2 eggs
1/2 cup oil (canola or vegetable oil)
12 large marshmallows
1/2 cup butter
1/3 cup unsweetened cocoa powder
1 teaspoon vanilla
5 cups powdered sugar
1/3 cup milk

INSTRUCTIONS:

Combine cake mix, eggs, and oil in bowl and mix well. 

Scoop tablespoon sized dough balls onto a baking sheet that has been sprayed with cooking 
spray or lined with parchment paper, then roll the dough in your hands to make smoother balls.


Bake at 350 degrees for about 9 minutes.

While the cookies are baking, cut each marshmallow in half with cooking shears. 
You can spray the shears with cooking spray so the marshmallows don’t stick. 
When the cookies are done, place a marshmallow half, cut side down, on each cookie 
and bake in the oven for another 2 minutes. 


Remove cookies from the oven and lightly flatten each marshmallow down.


While the cookies cool, make the frosting. Melt the butter and mix in the cocoa powder and 
vanilla. Add the powdered sugar and milk and mix with a hand mixer or stand mixer 
on high for a few minutes until smooth.

 Frost the cookies with a piping bag or spread the frosting over the cookies with a knife 
or spatula to cover the marshmallows completely.


Examine what they look after taking a bite.


Enjoy the rest of the cookie!
