Rosemary's Day To Exchange Her Cookie Recipes

Welcome to Rosemary's day for the Virtual Cookie Exchange!

I'm so lucky to have sweet Rosemary hanging out on my blog today.
She's sharing a couple of her cookie recipes including one from her
mother-in-law, Grandma B, who made them every year for Christmas.


1 cup butter, softened
1/2 cup powdered sugar
2 tsp. vanilla
2 cups flour
1/2 tsp. salt
1 cup oatmeal

Xmas Filling
Powdered Sugar Frosting
Angel Flake Coconut

Beat butter until creamy; add sugar. Beat until fluffy. Stir in vanilla.

Gradually add flour and salt. When mixed, add oatmeal.
Form into 1" balls. Make thumbprint and fill with Xmas filling... approx. 1/2 tsp.
Bake on ungreased cookie sheet at 325 for 20 - 25 minutes.

When Cool, frost with Powdered Sugar Frosting and sprinkle coconut on top.


1 cup dark raisins
1 cup chopped dates
1 cup finely chopped walnuts
1 cup sugar
1 - 1/2 cup water

Combine ingredients and cook slowly over low heat until water has cooked down
and ingredients are well blended and thick. Add more water if needed. Cool. This can be
halved but I always freeze what’s leftover so I can make these whenever I want.


1/2 cup butter (1 cube)
2 1/2 cups powdered sugar
1 tsp vanilla
1 - 2 tbls milk
Cream butter; add powdered sugar and blend well. Add vanilla and mix well.
Depending on spreading consistency, add milk one tablespoon at a time.
Use more if needed. Beat well.


1/3 cup butter
1/4 cup sugar
1 cup flour
1/4 cup flour
2 T. sugar
1/2 -8 oz can almond paste ( 1/2 cup) or marzipan, if you prefer!
2 T. butter
1/3 cup seedless raspberry jam
1/4 cup sliced almonds, toasted
   (I forgot to toast my last batch - it's better when they're toasted!)
Powdered Sugar Icing (optional)

FOR CRUST: Beat the 1/3 cup butter on medium to high speed for 30 seconds. 
Add the 1/4 cup sugar and beat until combined. Beat in the 1 cup flour
(mixture will be crumbly). Press the mixture evenly into the bottom of a
greased 8x8x2 inch baking pan. Bake at 350 for 10 minutes.

MEANWHILE: Combine the 1/4 cup flour and the 2 T sugar in a small bowl. 
Cut in almond paste and the 2 T butter with a pastry blender until crumbly. Set aside.

Spread jam over hot baked crust. Crumble almond paste mixture over the jam. 
Sprinkle with sliced almonds. Bake at 350 for 20-25 minutes or until topping is golden.
Cool in the pan on a wire rack. If desired, drizzle with Icing. Cut into bars.
These are very sweet so I cut into small triangles. You might want to consider no icing
or using the icing sparingly.

POWDERED SUGAR ICING: Combine 1 cup sifted powdered sugar, 1/2 teaspoon
vanilla and enough milk (4-5 teaspoons) to make an icing of drizzling.

  5. OOhh! The raisins and date filling sounds so yummy. They remind me of my grandmother's pinwheel cookies. I like trying recipes that I know others have made so I really appreciate the insigts such as the one that toasting the almonds is better than using untoasted ones. It made me smile as I have done that many times--forget to do something or some method in the recipe. Thanks for sharing.

  9. Grandma B didn't have any of this written down so I kind of had to wing it the first time and create the recipes. The kids said they tasted just like hers ... I like them as well. For the filling, she would use what was available. Sometimes dates and other times figs ... Always tasted good and the filling freezes well! Hope you enjoy them.
