Christmas Morning Cookies For The Virtual Cookie Exchange

It's my day for the Virtual Cookie Exchange...welcome, welcome, welcome!
So many amazing recipes, quilts, and traditions the last few days.
Thanks everybody for sharing and visiting!

It's had been a tradition in my family to open presents on Christmas morning before eating
breakfast. We'd check out what Santa brought, open presents, and then dash off to my
mom's house to eat. She'd have breakfast going by the time we got there. There was never a
shortage of waffles, pancakes, bacon, and homemade sausage. Of course she'd also have fresh
Norwegian lefse with butter and brown sugar waiting for us, too.

My attempt a few years ago to make her lefse recipe.
It didn't taste as good as my mom's.

The problem with the breakfast tradition was that we were all so hungry by the time we
got to my mom's house. So, as a good mom and dad, we'd let the kids eat a cookie or two
from all the goodies we'd either baked or received from neighbors and friends.

The Christmas Morning Cookie recipe!
Please note: I am not saying these are healthy cookies, but they make
grumpy children happy while waiting for their REAL breakfast.

The cookies waiting for caramel drizzle and salt

Full of pecans, raisins, and chocolate chips

They are good without the salt, but it gives it a nice sparkle

  18. My favorite cookies are creme de menthe, at least they used to be when I ate and baked cookies years ago.

  19. My favorite cookie is not a cookie at all, but candy, which I make every year, along with about 15 other cookies. Ever since I found the recipe for copycat Ferraro Rocher candy I knew I had to try it, since I really love them. Granted, the original is definitely better, but this recipe satisfies my craving for them, and, at a much cheaper price. Your cookie recipe sounds delicious, and one I will definitely make.

  25. My new daughter in law is Norwegian and introduced us to lefsa last year. Oh what a treat that was. I learned a lot about the history of it from her mom too. Can't wait for them to make more this year. Your Christmas morning cookies sound wonderful. If there is one day of the year that we can not worry about healthy, can't it be Christmas! LOL... Have a very Merry Christmas.

  28. Yummy looking cookies. Made the Chocolate Cheesecake bars yesterday - they are delicious. Loved the pic - your kids? - and especially loved seeing the toes peeking out from underneath. :) So sweet.

  29. Oh shoot. I meant to mention the lefse. When I grew up, there were lots of families with Norwegian ancestry in our area. Lefse was something they talked about and I was invited to enjoy the treat by a friend. I do think there is a certain mastery to lefse probably like quilting - practice, practice, practice. :)

  38. A cookie quilt? Supper two nights ago included a bowl of "burnt offering". Ok. I had a busy day of quilting and quilting on my mind. My husband tasted these offerings and he said, "They kind of taste like sweet potato fries." Well, obviously, I can't cook and quilt at the same time. Karen

  39. I'm thinking that cookies that contain oatmeal, craisns and pecans fall into the healthy category. My family did Christmas breakfast/bruch. I always felt it was better than dinner. We were still wide awake and not literally weighed down.
